Macadamia Encrusted Halibut and Velvet Elk

Happy 7th Anniversary to US!!! It was Han's turn to plan our anniversary this year, and I must say it was one of the best. We took off for a few hours to St. George and just enjoyed being together alone! There was silence in the car for the first few miles until Glenn Beck mysteriously appeared from Hans' Ipod. So we spent the rest of the ride talking about the atrocities of mankind and the ridiculous things that some people think. It really was funny. As much as I complain about Glenn Beck, I do quite like his sense of humor. Anyway. We went and visited our brother and sister in law which we rarely see( which is strange since we only live an hour away) ant it was fun to get to talk and get to know their kids without ours there. I actaully felt like an aunt! We then went shopping for much needed new car seats. Hiett is a major escape artist and keeps getting out of the one he had, plus he really was getting too big for it, so he got a new one. And then we bought a new infant carrier for our new addition. We topped off the shopping expedition by going to Sportsmans and looking at a new short barreled shotgun. The salesman was strange, but knew his stuff. It's amazing what people will say when you tell them you want to buy a gun for self defense. Like how which gun inflicts more damage or pain and what actaully kills a person( not the bullet or bleeding but the reprecussions of the impact- in case you wanted to know- I didn't but I thought I would share.) And their language completely changes- this kid swore like a sailor! The ammo shelves were EMPTY- it was strange. I guess Obama didn't realize that we would just buy a ton of ammo and stockpile it with our food storage.:)
Oh, but then came dinner! #1 There is nothing better than having dinner made for you. It doesn't matter if it is McDonalds or fine dining. No time spent, no clean up, no worry about menu or shopping, just enjoy and then pay. #2 A dinner without me constantly reminding Hiett that his food is on his plate to eat and to chew and swallow each bite bribing(or threatening- depending on my mood) to finish all of his food, is a rare treat. #3 This restuarant we went to, The Gun Barrel, has an excellent variety of some unsual stuff. Everything is prepared in house, even the desserts. Most of the food like a normal steakhouse. A few salads, a little chicken and then the seafood and steak. But then come the wild game. Elk and Buffalo among others. We got some "firebranded shrimp". They were wrapped in bacon, grilled and then smothered in a a sweet peach barbeque sause. Oh my. That's all I could say. Next time I am ordering three orders of those instead of an entree. Then I ordered the HAlibut and HAns got his Velvet Elk medallions, which are the tenderloin- remarkabley tender adn juicy. These babies swam in a tangy brown sauce that was flavored with leeks and sun dried tomatoes. It was fabulous. YOu all know that I love food- any food- but our 7th anniversary will go down in history, chalked up to one of the best eating experiances that I have had. Thank you Hans, for putting up with me for 7 whole years so we could share a delicious, memorable meal together. I love you sweetness!

Sounds wonderful!!! Seven Years and two beautiful boys and one more little one on the way! Who would have thunk it!!! It will be 35 years for dad and I this year! Amazing! Glad you had a great time you needed that before #3 arrives. Love you tons and call and let me know what the dr. says, I am working Friday. Love you.

Wow, I can't believe it's been 7 years already! Congratulations=) Thank you for posting pregnant pictures, and you don't look like you weigh 174 if that helps at all=) I love you guys so much!

We've yet to try the Gun Barrell...Rob would super enjoy it, me I'd be going for Rob. If there's chicken, I'm safe.
Glad you had a good anniversary. You're looking sooo dang cute all pregnant!

The Gun Barrell is an amazing place isn't it? Brett and I went there last year and just LOVED it! All of it! Hiett sounds just like David! I hope you don't struggle as long as we have with his food issues. Brett is wanting to get a gun too! You should have heard Beau telling him what kind he needed to get to protect the family and kids- it was hilarious. Men get so serious about that kind of stuff! Congrats you guys on 7 years. Mine and Brett's 7th is on March 29th.

The Gun Barrell sounds wonderful! We'll have to try it sometime. I agree with Bonnie - you are definitely food critic material! Congrats on 7 years. Time flies when you're having fun, huh? :)
You do look adorable pregnant. I wish my body had done the basketball thing but no such luck! Love you tons and tons!

WELCOME to our new home

We got moved in settled a few weeks ago, but it has taken me longer than I thought to get back into my groove. I hadn't realized that I HAD a groove, maybe it was more like a rut, but anyway, I am comfortably back into it and that is that. So, I am sure that you are all curious to see what exactly we moved into. You have to promise to not be jealous!!! Really.... everybody seems to think that I mind terribly our new home, but I don't mind it that much. I am with Hans, the boys have their dad and unlimited roaming space and so much more family close by, I would make the trade again anyday. Not to mention the projects that I am planning that will keep me busy for quite some time. Ready?
Well, the power plant pays for all of their employees to move within 40 miles of the plant so they packed us up and shipped us off. This is the truck arriving. It was huge! Our stuff only took up about 1/3 of the truck!


Hans and I are still in debate about what is happening with the exterior of the house. I want to get some paint and paint it, then get a good color match and do the shutters differently. The porch will be fixed- it sags in the middle and threatens to collapse whenever you step on it. I want to put a little roof over it, a simple little peak that stretches back to the trailer, that would hopefully break up the ugliness a little bit. we will probably be here for 21/2 to 3 years so I want to make it look like a home for us.

OK- let me explain that roof looking thing. Nevermind- can't explain it. But I am going to try to put little support strut things off from it to support a new piece of wood that will make it look like a beam instead of a chintzy shingled roof inside of a house. And that is faux brick paneling. he he he. I have never seen it before. I giggle when I see it. The next pic is the kitchen dining combo. The floor is newish lineolium, so that is good to stay. But the wallpaper is falling off and so I am going to practice my tiling and do a medium dark greyish tile and then strip the cupboards and paint them a white. The door knobs will be replaced too. Hopefully this will work with the mustard yellow stove- this trailer is 30 years old, so it is very 70's with the wood paneling EVERYWHERE!!


UNGH. The paneling is sooo dark! This hallway could use a coat of paint. Hans' grandma is skeptical of us painting the paneling, truthfully I am too, but this is so drab I have got to do something! The light fixture is going to be replaced so my dad doesn't hit his head everytime he comes over. Well, for that matter, most of the light fixtures will get to be replaced soon.


I saved the best for last!!! Our bathroom is horrid! Seriously- I don't mind it, it just makes me laugh it is that ugly. The floral nasty green print coordinates with the yellos tub, toilet and sink. The linoleum is the same shades and that crazy design you could sit and stare at for hours trying to figure out the pattern. A new sink is already in the works. A new shower curtain already bought, and so many plans floating in my head. Wall paper off, new linoleum, tiling another backspash, paint the walls, build a frame around the mirror to make it the focal point. So much to do. Will I get it done in my 3 year time limit?? Oh and the kicker, the washer and dryer are in the bathroom! Convienent!!!


We had such a fun Halloween! It got kicked off with an adult( that sounds naughty!) Halloween Party which was fun as it always is to get together with all of everybody. I love seeing all the costumes and wish I knew which file Hans put them uner so I could post them. Beau and Bonnie won my prize for best dressed- Beau looked hot in that eyeliner and black nail polish. Anyway, then on Halloween we had a bunch of the kids over for a little party and had a great time- I did anyway, I hope the kids did too. We went trick or treating in the "old ward" just to say hi to some folks we hadn't seen in a while. The boys had a great time. Tait slept through it all in his comfy bear outfit and Hiett only fell down two sets of stairs with his AWESOME hoomemade batman mask. I don't know how much longer I will get away with homemade costumes but until then- $6 always beats out $20-40 in my opinion, and I think the kids have more fun being "creative". HA ha. We had a great time and the candy is almost gone already- I swear I haven't helped too much!
